Cloé 2020 is a rosé wine from Terre Siciliane IGT, produced by Abbazia San Giorgio on the volcanic island of Pantelleria. It is made exclusively from 100% Nerello Mascalese grapes. The winery, founded in 2015, is committed to natural winemaking, employing organic and biodynamic farming practices with minimal intervention. The vineyards utilize the traditional 'vite ad alberello' system, a UNESCO Intangible Cultural Heritage, to protect the vines from the island's climate. The volcanic soil of Pantelleria is a key element in shaping the wine's character.

WINE MAKING PROCESS
The Cloé 2020 is produced from hand-harvested and selected Nerello Mascalese grapes. Following destemming and crushing, the grapes undergo a brief maceration on the skins for a few days to achieve the desired color. Fermentation is spontaneous, utilizing indigenous yeasts in stainless steel tanks. The wine then ages for about six months, with part of it maturing in stainless steel and the remainder in chestnut barrels. No sulfur dioxide is added throughout the winemaking process, including at bottling.
