WINE MAKING PROCESS
The winemaking process for Clos Cibonne Cuvée Spéciale Tibouren involves hand-harvesting grapes early in the morning. The grapes are 100% de-stemmed before undergoing fermentation in stainless steel vats with native yeasts at controlled temperatures. Maceration lasts for ten days, with twice-daily pump-overs to aid extraction. Following fermentation, the wine is aged for 4 to 6 months in foudres, large wooden vats, before bottling.
