WINE MAKING PROCESS
The winemaking process for Gérard Bertrand Clos du Temple begins with hand-harvesting grapes at sunrise into small crates. The grapes are then whole-bunch pressed, and the finest free-run juices are selected. Fermentation takes place at low temperatures in stainless steel tanks, preceded by a 24-hour settling of the must at controlled temperatures without added sulfur. Following fermentation, the wine undergoes a 6-month aging period in new French oak barrels, resting on its fine lees with regular yeast stirring. This meticulous approach aims to build complexity and texture.
