The 2016 vintage for Jadot's parcels was fortunate, as their vines, situated on the lower slopes, were unaffected by the frost that impacted other Burgundy vineyards. WINE MAKING PROCESS
The winemaking process for this Clos Vougeot Grand Cru begins with a manual harvest in small crates. The grapes are then destemmed before undergoing fermentation in open wooden or stainless steel vats. This fermentation period lasts for three to four weeks, during which the cap is punched down twice daily to facilitate extraction. Following fermentation, the wine is aged for approximately 18 months in oak barrels, with one-third of the barrels being new.
