WINE MAKING PROCESS
Cocagne is produced using grapes from vines aged 30-70 years old, farmed using certified organic and biodynamic methods. The grapes are hand-harvested into small crates. Vinification involves a one-week maceration on full clusters in concrete tanks, followed by the use of only the free-run juice. Fermentation is carried out with indigenous yeasts. The wine is then aged for six months in concrete tanks before being bottled unfined and unfiltered.
