Colección Reserva

The grapes for the Colección Reserva are harvested at optimal maturity, destemmed, and vinified separately by variety in temperature-controlled stainless steel tanks. Fermentation begins slowly at low temperatures (10°C to 12°C) with selected yeasts to capture delicate aromatics, finishing at 25°C to 26°C. Following a prolonged skin contact maceration, the wine undergoes full malolactic fermentation in tanks before blending. The final blend is aged for a minimum of 12 months in new American oak casks, followed by extended aging in the bottle.
