WINE MAKING PROCESS
The Vespolina grapes are hand-harvested and then destemmed. Fermentation takes place in temperature-controlled stainless steel tanks using indigenous yeasts. Following fermentation, the wine is aged in tank. It is then bottled unfined and unfiltered, a process that aims to retain the wine's natural character and integrity.
