ABOUT THIS WINE
Comte Henry d'Assay is a boutique négociant label founded in 2016 by Comte Henri d'Assay, the former director of Pouilly-Fumé's historic Château de Tracy, and his wife Corinne. Drawing on decades of relationships with top growers in the Central Loire, they source grapes from exceptional parcels. The Coteaux du Giennois is a small, lesser-known appellation located just north of Sancerre and Pouilly-Fumé. It shares similar geological formations, allowing this wine to showcase the classic, flint-driven terroir of the region at an outstanding value.

WINE MAKING PROCESS
The winemaking process is designed to preserve the purity of the Sauvignon Blanc fruit and the distinct mineral character of the flint-heavy clay and limestone soils. Grapes are harvested by hand and gently pressed. Spontaneous fermentation takes place in temperature-controlled stainless steel tanks using only native yeasts. Following fermentation, the wine is aged on its fine lees in stainless steel for a prolonged period, which adds subtle texture and complexity to balance the high natural acidity.
