WINE MAKING PROCESS
The production of Concentus Rosso involves a multi-step process. Key grape varieties, Corvina and Rondinella, are subjected to a 40-day appassimento process to concentrate fruit and tannins. Fermentation takes place in small stainless steel vats with frequent pumping over to enhance color and flavor extraction, continuing until all sugars are fermented. The wine then undergoes aging in French oak barrels for 8-10 months, followed by 6 months of bottle aging. Corteforte emphasizes organic and sustainable practices in its viticulture and winemaking.
