WINE MAKING PROCESS
Continuum 2019 is produced from 100% estate-grown fruit on Sage Mountain Vineyard. Grapes are hand-harvested at night and sorted before de-stemming. Fermentation takes place in French oak or concrete tanks following a cold soak, with daily pumpovers and délestage, and extended skin contact. The wine is aged for 22 months in a combination of new and used French oak barrels, with a portion aged in concrete amphora. It is bottled without fining or filtration.
