WINE MAKING PROCESS
The winemaking process at Continuum Estate begins with hand-harvested grapes, sorted for quality. Fermentation takes place in French oak or concrete tanks, utilizing a cold soak followed by pumpovers and délestage, with extended skin contact. The wine then undergoes 22 months of aging in French oak barrels, including new and once-used cooperage, and a concrete amphora. The final wine is bottled without fining or filtration, reflecting a commitment to minimal intervention.
