WINE MAKING PROCESS
The winemaking process for Cordero San Giorgio Partù Pinot Nero begins with a soft pressing of the grapes. Alcoholic fermentation is carried out in stainless steel tanks under controlled temperatures. A key decision is the absence of malolactic fermentation. The wine then undergoes aging on its lees in stainless steel for about six months. Following this, it rests for a minimum of two months before being released.
