WINE MAKING PROCESS
Corimbo Organic 2020 is produced from 100% Tempranillo grapes. Alcoholic fermentation occurs spontaneously in stainless steel vats and some large wood vats. Malolactic fermentation follows, taking place in French oak barrels or vats. The wine is then aged for 14 months, with 80% in French oak and 20% in American oak barrels. The grapes are sourced from old bush vines (25-30 years old) grown on limestone and chalk soils at altitudes between 800 and 870 meters. The harvest is manual, with grapes hand-picked and hand-sorted. The winery employs organic viticulture and does not use irrigation.
