WINE MAKING PROCESS
The grapes for the 2025 Coriole Nero were sourced from two distinct estate-grown vineyard blocks in the Willunga sub-region, situated on stony, red-brown clay soils. Following a hand-harvest in early Autumn, the fruit underwent spontaneous fermentation with wild yeasts in open concrete tanks. To enhance aromatic complexity and texture, 15% whole bunches were included in the ferment. The wine was then matured for 5 to 6 months in seasoned, neutral French oak barrels to preserve its bright fruit profile before blending and bottling without animal-derived fining agents.
