ABOUT THIS WINE
Corte degli Attimi is a vibrant sparkling red wine crafted by Poderi Fiorini, a dedicated producer in the heart of Emilia-Romagna, Italy. Poderi Fiorini's commitment to quality and sustainability is evident in their certified Organic N.O.P. farming practices, ensuring a wine that is both authentic and environmentally conscious. Corte degli Attimi is a Brut style, offering a refreshing and lively experience that showcases the distinctive character of this historic Italian grape.

WINE MAKING PROCESS
The winemaking journey for Corte degli Attimi begins with a meticulous hand-harvest of the organically grown Lambrusco di Sorbara grapes. Upon arrival at the winery, the grapes undergo a brief maceration on their skins, typically lasting between 2 to 6 hours. This short contact time is crucial for extracting the wine's characteristic lively purple color while preserving its delicate fruit profile. Following maceration, fermentation takes place in stainless steel vessels for a period of 30 days. The temperature is carefully controlled at 15°C to ensure a slow and steady fermentation, utilizing conventional yeasts to achieve the desired aromatic complexity and freshness. After fermentation, the wine is aged for an additional 30 days, also in stainless steel, allowing it to settle and integrate its flavors before bottling. This process emphasizes the purity of the fruit and the wine's inherent vibrancy, resulting in a sparkling red wine with notable freshness and clarity.
