WINE MAKING PROCESS
The production of Corte Giara Amarone della Valpolicella La Groletta begins with the traditional appassimento method, where grapes are dried for 3-4 months to concentrate sugars and flavors. This is followed by gentle pressing and fermentation in temperature-controlled stainless steel tanks. The wine then undergoes aging for approximately 15 months in a mix of French barriques and large Slavonian oak casks, followed by an additional 6 months of bottle aging.
