ABOUT THIS WINE
Weingut Michi Lorenz is located in the Sausal mountain range of Südsteiermark, Austria, where the family has a winemaking legacy dating back to 1524. Winemaker Michi Lorenz approaches his craft with a philosophy of 'attention but not interference,' transitioning the estate to certified biodynamic farming. 'Cosmos' represents the winery's total embrace of Demeter biodynamics, acknowledging the interconnectedness of the soil, vines, moon cycles, and the broader universe. The grapes are grown on extremely steep terraced slopes in Kitzeck im Sausal, the highest wine-growing village in Austria, at an elevation of 620 meters.

WINE MAKING PROCESS
The grapes are 100% hand-harvested from 30-year-old vines grown on pure slate and schist soils. In the cellar, the winemaking is characterized by minimal intervention. The juice undergoes spontaneous fermentation using only indigenous yeasts. The wine is aged on its fine lees in neutral, large old oak casks to build texture and complexity. It is bottled unfined and unfiltered with no added sulfites (total SO2 < 10 mg/L) and packaged in eco-friendly lightweight glass.
