WINE MAKING PROCESS
The production of Costasera Amarone della Valpolicella Classico DOCG begins with hand-harvested grapes from the Valpolicella Classico region. The defining technique is *appassimento*, where grapes are dried on racks for several months, concentrating sugars and flavors. This is followed by a slow fermentation of the dried grapes. The resulting wine is then aged for approximately 24 months, using a mix of large Slavonian oak casks and smaller oak barrels. A final period of bottle aging ensures integration before release. Masi Agricola emphasizes a philosophy of traditional methods combined with modern winemaking techniques to achieve balance and expression.
