WINE MAKING PROCESS
The winemaking process for Fontanafredda Coste Rubin Barbaresco begins with de-stemmed and crushed Nebbiolo grapes. Fermentation is carried out using selected yeasts at temperatures between 28-30°C, with regular pump-overs for extraction over 15 days. Malolactic fermentation follows. The wine is then aged for one year in large 2,000 and 3,000-liter Allier oak barrels, followed by a short period in stainless steel tanks before bottling.
