WINE MAKING PROCESS
The winemaking process for Côte de Beaune Rouge Les Pierres Blanches begins with a five-day cold pre-fermentation maceration, followed by a 19-day cuvaison with daily punch-downs and light pump-overs. Fermentation occurs naturally without added yeasts or enzymes. The wine is then aged for nine months in oak barrels, with 20% new oak, before a final month in stainless steel tanks prior to bottling. The producer employs organic and biodynamic farming methods.
