WINE MAKING PROCESS
The winemaking process for this Côte de Nuits-Villages begins with hand-sorting and gentle crushing of the Pinot Noir grapes. Fermentation occurs in small wooden vats with controlled temperatures, featuring twice-daily punching down to aid extraction. Following fermentation, the wine matures on its fine lees for several months. It is then aged in oak barrels for 10 to 12 months, with approximately one-third being new oak, utilizing a mix of barrel sizes including foudres and 500-liter barrels. Domaine Louis Jadot is in its second year of organic conversion as of 2022.
