ABOUT THIS WINE
The Côté Mas Crémant de Limoux Brut is a sparkling white wine from the historic Limoux appellation in the Languedoc region of Southern France. Produced by Domaines Paul Mas, this Non-Vintage Brut is a testament to the region's pioneering role in sparkling wine production, dating back to 1531. The Limoux terroir, influenced by its proximity to the Pyrenees, offers a climate conducive to producing wines with balanced acidity and aromatic complexity. Jean-Claude Mas, at the helm of Domaines Paul Mas, blends traditional winemaking with a modern sensibility, aiming for authenticity and refinement in his wines. The estate's philosophy is encapsulated in their slogan, 'Rural Luxury since 1892'.

WINE MAKING PROCESS
Côté Mas Crémant de Limoux Brut is produced using the traditional method, a process involving a second fermentation in the bottle. Grapes are whole-bunch pressed and undergo their initial fermentation in stainless steel vats at controlled temperatures. Following this, a 'Liqueur de Tirage' is added, and the wine undergoes its secondary fermentation in bottle. It is then aged on its lees for an extended period, contributing to its complexity and fine mousse, before being disgorged.
