WINE MAKING PROCESS
The Côté Mas Orange is produced using a short maceration period of 6-8 days on the skins of white grapes, conducted under controlled temperatures. Pumping over is employed multiple times during this phase to enhance the extraction of fruit and aromas. Following maceration, fermentation and aging both take place in stainless steel tanks. The grapes are harvested at night to maintain their freshness. Domaines Paul Mas is committed to environmental sustainability, with certified organic vineyards and HVE3 certification.
