WINE MAKING PROCESS
The Côté Mas Organic Rosé is produced using a blend of Grenache, Cinsault, and Syrah. The grapes are destemmed, and each varietal undergoes separate fermentation in temperature-controlled stainless steel tanks at approximately 17°C for two weeks. Both free-run and first press juices are utilized. Following fermentation, the wine is aged on its lees for about 40 days in cement vats, with regular stirring to enhance fruit intensity and preserve acidity. The vineyards are managed under sustainable practices, including Terra Vitis certification and High Environmental Value (HVE3) standards, with a portion farmed organically. Harvests are often carried out at night to maintain grape freshness.
