AROMAS & FLAVOURS
ABOUT THIS WINE
Côtes à Côtes was born out of sheer necessity and misfortune. In 2017, a catastrophic spring frost decimated vineyards across the Jura. André-Jean Morin was left with so little fruit from his separate Pinot Noir and Trousseau parcels that he could not vinify them independently. He made the decision to co-ferment and blend them together into a single 'side-by-side' cuvée. The resulting wine was so vibrantly successful and popular that the estate made it a permanent fixture in their portfolio. The Morin family has a historic presence in Arbois dating back to 1704, spanning eight generations. However, the estate almost disappeared in the 20th century. Deeply scarred by World War I, André-Jean's grandfather, Marius, sold off nearly all family vineyards in 1922, keeping only a single tiny parcel: La Touraize. In the mid-1950s, André-Jean's father, Michel, began slowly rebuilding the estate from this single plot. André-Jean joined in 1985, initially selling grapes to the local cooperative. In 2009, he boldly withdrew from the co-op, selling three hectares to fund the construction of his own cellar. Today, he and his wife Héléana bottle 100% of their fruit under their own label.

WINE MAKING PROCESS
The grapes for this cuvée are grown on distinct soils: Trousseau on rich gravel over clayey marl, and Pinot Noir on grey marl. The estate has been certified organic since 2016 and biodynamic since 2019, treating the vines solely with copper, sulfur, and herbal teas. Harvesting is done entirely by hand using small containers to keep the grapes intact. In the cellar, the grapes undergo spontaneous fermentation using indigenous yeasts without chaptalization. Gravity-fed vatting is utilized without initial SO2 additions, using carbon dioxide to prevent oxidation. During maceration, the cap is gently wetted two to three times a week with no punching down or pump-overs. Before fermentation completes, the free-run and press wines are blended. Aging takes place in stainless steel vats or concrete amphorae. Sulfur additions are kept minimal, restricted to roughly 30 mg/L added only after the completion of malolactic fermentation. The wine is bottled unfined and unfiltered.
