ABOUT THIS WINE
Domaine Philippe Butin is a third-generation estate located in the village of Lavigny, nestled in the heart of the Jura region. Philippe Butin, who originally trained as an electrician, returned to the family estate in 1981 and spent over four decades crafting traditional Jura wines. In 2023, he passed the torch to his son Aloïs and partner Kevin Cesco-Resia. The estate is highly regarded for its commitment to expressing the pure typicity of the local terroirs, historically collaborating with renowned geologist Michel Campy to map their vineyards. This Trousseau comes from old vines planted in the prestigious 'les Amandiers' parcel at the 'la Forge' lieu-dit, characterized by steep limestone and clay slopes.

WINE MAKING PROCESS
The grapes are 100% hand-harvested from old vines grown under sustainable viticultural practices. In the cellar, the winemaking is designed to preserve the fresh, vibrant fruit character of the Trousseau grape. Fermentation takes place in stainless steel tanks using only indigenous yeasts, with a skin maceration period of approximately 10 days. Crucially, the wine is aged entirely in stainless steel tanks for 11 to 14 months and never sees any wood contact. A minimal dose of sulfites is added only at bottling to ensure stability.
