WINE MAKING PROCESS
The winemaking process for Coulée de Serrant Moelleux begins with biodynamically farmed Chenin Blanc grapes from ancient vines. Harvests are performed in multiple passes over several weeks to select grapes at peak ripeness, with some noble rot contributing to the wine's character. Fermentation occurs in used 500-liter oak barrels, with less than 5% new oak used. The wine then undergoes aging in used oak barrels. This approach prioritizes the expression of the unique terroir and the purity of the Chenin Blanc grape.
