WINE MAKING PROCESS
The Crémant d'Alsace Comète 2013 is produced using the traditional method. Primary fermentation takes place in temperature-controlled stainless steel tanks with native yeasts. Following this, the wine undergoes aging in large 1,000-liter foudres for nine to ten months. The second fermentation occurs in the bottle, a key step in creating sparkling wine. The grapes are hand-harvested and selectively sorted. The estate employs biodynamic farming practices, with vineyard management influenced by the lunar calendar, and has not used pesticides since 1997.
