Clotilde Davenne, a former chief oenologist with extensive experience in Chablis, established her own domain with a philosophy focused on expressing the purity of the terroir and grape varietals. This Crémant de Bourgogne is made using the traditional method, a process akin to Champagne production.

WINE MAKING PROCESS
Clotilde Davenne Crémant de Bourgogne Blanc de Blanc is produced using the traditional method, involving secondary fermentation in the bottle. The primary fermentation takes place in stainless steel tanks at low temperatures. Following this, the wine undergoes aging for a minimum of 18 months on its lees ('sur lattes'). Grapes are hand-harvested to ensure quality. The producer adheres to High Environmental Value (HVE) farming practices and works naturally in the vineyards without the use of chemicals.
