WINE MAKING PROCESS
The production of François Martenot Crémant de Bourgogne Brut follows the traditional method. Grapes are pressed upon arrival, and the resulting base wines are fermented in stainless steel vats at 18°C. These base wines are then assembled before undergoing a second fermentation in the bottle. Post-fermentation, the wine is aged, then riddled using gyro-pallets, and disgorged. A final expedition liqueur is added before the wine is sealed. Maison François Martenot emphasizes sustainable vineyard practices, with many of their estates holding HEV 3 certification.
