WINE MAKING PROCESS
Crémant de Loire Blanc de Blancs Brut Cuvée Celeste is produced using the traditional method, which involves a secondary fermentation taking place directly in the bottle. This process is essential for creating the wine's characteristic effervescence and developing its complex profile. The grapes are hand-picked and harvested into perforated boxes to maintain fruit quality. Following fermentation, the wine is aged in underground caves, with a minimum of 12 months of aging required by the Crémant de Loire AOC, including at least 9 months spent on its lees. This extended contact with the lees contributes to the wine's texture and aromatic complexity.
