ABOUT THIS WINE
BIKICKI is a pioneering natural wine estate located on the northern slopes of Fruška Gora in Vojvodina, Serbia. Founded by Đorđe Bikicki, a former professional basketball player and Belgrade underground drum’n’bass DJ, the winery took shape after a pivotal meeting with legendary natural winemaker Oszkar Maurer. Embracing a philosophy of minimal intervention, the estate focuses on organic viticulture and ancient winemaking techniques. The vineyards benefit from a unique microclimate near the Danube River, which acts as a thermal mirror, reflecting sunlight and providing constant breezes that preserve natural acidity in the grapes.

WINE MAKING PROCESS
The winemaking process for this skin-contact white wine is defined by minimal intervention. Grapes are 100% hand-harvested in three separate passes to optimize sugar, acidity, and phenolic ripeness. Spontaneous fermentation is carried out by wild, indigenous yeasts with no temperature control. The wine undergoes an average of five days of skin maceration, giving it a distinctive copper hue and structural complexity. It is aged for two years in used barrique oak barrels and bottled completely unfiltered and unfined, with no added sulfur beyond what is naturally produced during fermentation.
