ABOUT THIS WINE
Cu by Bikicki is a skin-contact orange wine produced by Bikicki Winery in Banoštor, a historic village situated on the northern slopes of Fruška Gora in Vojvodina, Serbia. Founded in 2013 by Đorđe Bikicki, a former DJ and environmental engineer, the estate is recognized as a key pioneer of natural winemaking in Serbia. The wine takes its name from the chemical symbol for copper (Cu), referencing the amber-coppery hue derived from Pinot Grigio skins during maceration. The grapes originate from the single vineyard parcel 'Milino Brdo', situated near the Danube River, which moderates temperatures and reflects sunlight onto the vines.

WINE MAKING PROCESS
The grapes are grown using sustainable and organic practices and are hand-harvested in two passes to achieve an optimal balance between natural acidity and phenolic maturity. In the cellar, the wine undergoes four to seven days of spontaneous skin maceration with native yeasts in neutral tanks without temperature control. Following fermentation, the wine matures for six to twelve months in light barriques made of used Hungarian and Serbian oak. The wine is bottled unfined and unfiltered with minimal total sulfur.
