WINE MAKING PROCESS
The production of Cuco Oloroso Dry begins with the fermentation of Palomino Fino grapes. Once fermentation is complete, the wine is fortified with grape spirit to around 17-18% ABV, a level that prevents the development of flor. The wine then enters a solera system for extended oxidative aging. This process involves fractional blending, where younger wines are topped up with older wines, and the wine is aged in contact with oxygen, leading to concentration and the development of characteristic aromas and flavors. The solera system ensures a consistent style over time.
