WINE MAKING PROCESS
Cucu Verdejo is produced using grapes from organically grown vineyards. The harvest is conducted by hand, with meticulous selection of the fruit. Vinification involves spontaneous fermentation with native yeasts, primarily in stainless steel tanks. A portion of the wine (20%) is aged for four months in used 300L French oak barrels, while the remainder is aged on its lees for approximately five months. This process aims to highlight the varietal's character and the influence of its high-altitude origin.
