ABOUT THIS WINE
The Cuvée des Vignettes from Clos Cibonne is a rosé wine from the Côtes de Provence region of France. The estate, a Cru Classé, is renowned for its commitment to the Tibouren grape, an ancient variety that was nearly lost. The Cuvée des Vignettes is sourced from the estate's oldest vineyard plots, with vines dating back to the mid-1950s. The vineyard's location by the sea on the Maures Mountains, with its salty, clayey soil and maritime influence, contributes to the wine's distinctive character. A unique aspect of Clos Cibonne's winemaking is the aging process, which involves maturation in hundred-year-old casks under a veil of yeast, a technique that imparts complexity and allows the wine to age gracefully.

WINE MAKING PROCESS
The winemaking process for Cuvée des Vignettes begins with the direct pressing of the grapes into stainless steel vats. Fermentation is initiated and controlled with refrigeration, lasting for about ten days. Post-fermentation, the wine is aged for a minimum of twelve months in hundred-year-old casks, known as foudres. A notable technique employed during this aging period is the development of a veil of yeast, or 'fleurette,' on the wine's surface, which is a characteristic of wines like Sherry. The grapes are harvested when they reach a balanced ripeness, with selective sorting and morning harvests being integral to maintaining fruit quality.
