ABOUT THIS WINE
Domaine Bourdy is one of the oldest wine estates in the Jura, established in the late 1400s and making wine since 1579. Historically famous for its ultra-traditional, long-aged oxidative white wines, the estate entered a new era when Laura Bourdy took over as the 16th generation. As an oenologist, Laura introduced a modern, vibrant, and free-spirited line of wines. Cuvée Lola is named after Laura’s youngest daughter, Lola, who was born right in the middle of the frantic 2021 harvest. Determined to manage the vinifications, Laura worked in the cellar with three-day-old Lola strapped to her in a papoose, marking the birth of this unique cuvée.

WINE MAKING PROCESS
Sourced from a microscopic 0.13-hectare single plot of co-planted vines, this wine is a rare red-white co-ferment. Whole, mixed grape clusters of Trousseau, Poulsard, and Chardonnay are harvested by hand, then macerated and co-fermented together for 6 to 7 days. Spontaneous fermentation occurs using only native, indigenous yeasts in stainless steel tanks. Due to the tiny quantity, manual foot treading is performed several times during maceration to gently extract color, soft tannins, and aromatics. No sulfur is added during winemaking, and the wine is aged for 6 months in stainless steel tanks before being bottled unfined with a very light filtration.
