This cuvée is distinguished by its 100% Chardonnay grapes, sourced from the Premier Cru village of Écueil on the Montagne de Reims. The region's sandy soils are noted for contributing a rounder, more fruit-forward character to the Chardonnay. The wine is named in honor of Elodie Desbordes' son, Paul, and reflects the producer's philosophy of highlighting individual vineyard plot identities.

WINE MAKING PROCESS
Cuvée Paul is produced using 100% Chardonnay grapes. The winemaking process involves fermentation in both oak barrels and tanks, followed by six months of aging on oak from the producer's own forest. The wine then undergoes an 18-month aging period in foudre (large oak casks) and is aged for three years on its lees. The dosage is 7 g/l, classifying it as Brut.
