WINE MAKING PROCESS
The Cuvée Sir Winston Churchill 2015 is produced using grapes from the best vintage years. The must undergoes two settling processes, including cold settling, before fermentation in stainless steel tanks at very low temperatures. Following fermentation, the wine is aged on its lees for an extended period, longer than legally required, to develop complexity and a fine bubble structure. The 2015 vintage was disgorged in September 2022.
