ABOUT THIS WINE
Clos Cibonne Cuvée Tradition is a rosé from the Côtes de Provence AOC, primarily composed of 90% Tibouren and 10% Grenache. The estate, with a history dating back to 1797, was significantly influenced by André Roux in the 1930s, who championed the Tibouren grape. Located near the Mediterranean coast in the foothills of the Maures mountains, the vineyard benefits from a specific terroir. The wine is distinguished by its aging process in old foudres under a veil of yeast (flor), contributing to its complexity and aging potential. Clos Cibonne is recognized as one of the 18 Cru Classés of Côtes de Provence.

WINE MAKING PROCESS
The winemaking process for Clos Cibonne Cuvée Tradition begins with direct pressing of the grapes, followed by fermentation in temperature-controlled stainless steel tanks using native yeasts. Maceration can extend up to ten days. A defining characteristic is the aging process, where the wine spends at least 12 months in 100-year-old foudres under a veil of yeast (sous-voile/fleurette). The estate employs organic farming practices.
