ABOUT THIS WINE
The Grosjean Cuvée89 Frizzante col fondo Bianco is a sparkling wine from the Valle d'Aosta region of Italy, produced by Società Agricola Grosjean Vins s.s. This wine is a testament to the Grosjean family's long-standing winemaking tradition, spanning over five decades, with the third generation now actively involved. Their commitment to environmental stewardship is evident in their organic farming practices, which began in 1975 and were certified in 2011. The winery is situated in the mountainous Valle d'Aosta, where high-altitude vineyards and challenging terrain shape the character of their wines. The Cuvée89 is produced using the ancestral method, also known as 'col fondo,' where a secondary fermentation occurs within the bottle, creating its characteristic effervescence. The blend primarily features Muscat Petit Grains and Müller-Thurgau, with Pinot Gris also noted as a component, reflecting the region's diverse viticultural landscape.

WINE MAKING PROCESS
The production of Grosjean Cuvée89 Frizzante col fondo Bianco begins with a hand harvest of grapes in early September. The whole clusters are pressed, and the resulting must is clarified through sedimentation for 12-18 hours before being decanted. Alcoholic fermentation is carried out in stainless steel tanks at approximately 12 degrees Celsius, utilizing only natural yeasts. To achieve the wine's characteristic sparkle, unfermented must, which was frozen immediately after harvest, is added to initiate a second fermentation directly in the bottle. The wine is then sealed under a crown cap. The vineyards are located in Quart, Saint-Christophe, and Villeneuve, at an average altitude of 850 meters, on steep slopes with inclines up to 70%. The vines were planted between 1972 and 1998 in sandy soils with limestone.
