WINE MAKING PROCESS
The winemaking process for Da Jeits Treixadura begins with the soft pressing of whole grapes at low pressure. Fermentation is spontaneous, utilizing native yeasts in small stainless steel tanks at a controlled temperature of 16°C for 30 days. Following fermentation, the wine undergoes a three-month aging period on its fine lees. Grapes are hand-harvested in 20 kg boxes.
