WINE MAKING PROCESS
The winemaking process for Cantina Zaccagnini Dal Tralcetto Montepulciano d’Abruzzo Organic begins with the soft pressing of grapes. Maceration occurs with a submerged cap, and fermentation is temperature-controlled. To minimize oxygen exposure, wine movement is achieved through vacuum aspiration. The wine is aged for approximately 8-9 months in large, neutral oak botti, with some sources indicating additional aging in Slavonian oak barrels for at least 4 months before bottling. Further maturation on lees in stainless steel takes place until bottling. The winery follows sustainable viticulture practices and is certified organic.
