WINE MAKING PROCESS
The winemaking process for Damana Crianza begins with hand-harvested Tempranillo grapes. A period of cold maceration is employed before fermentation in stainless steel tanks at controlled temperatures. Malolactic fermentation follows, either in stainless steel or barrels, to enhance texture and complexity. The wine is then aged for 12 months in a combination of French and American oak barrels. Sustainable viticulture practices, referred to as 'raisonné', are utilized in the vineyards. Production volumes are managed, with figures around 42,000 to 50,000 bottles annually, alongside magnums.
