WINE MAKING PROCESS
Daniel Bouland Côte de Brouilly Cuvée Mélanie is produced using traditional vinification methods with natural yeasts. The fermentation involves full clusters and semi-carbonic maceration, with fermentations reaching 34-35°C and daily pump overs. The wine is subsequently aged in old oak foudres, primarily neutral oak, to allow the fruit and terroir to shine. Grapes are hand-harvested from old bush vines, some as old as 100 years.
