ABOUT THIS WINE
Raventós i Blanc De Nit 2022 is a sparkling rosé wine from the Conca del Riu Anoia appellation in Catalonia, Spain. Produced by Raventós i Blanc, a winery with a documented viticultural tradition dating back to 1497, this wine represents a commitment to indigenous grape varieties and biodynamic farming practices. The wine's name, De Nit, translates to 'at night' in Catalan, hinting at its subtle allure. The producer departed from the DO Cava designation in 2012 to establish the more stringent, uncertified Conca del Riu Anoia appellation, emphasizing their dedication to terroir-driven winemaking.

WINE MAKING PROCESS
Raventós i Blanc De Nit is produced using the traditional method, also known as Méthode Champenoise. The grapes are hand-harvested and gravity-fed into the cellar for slow, low-pressure pressing. The first fermentation occurs in stainless steel tanks, with varieties and plots vinified separately. Secondary fermentation takes place in the bottle, followed by a minimum of 18 months aging on lees. The wine is crafted from a blend of Macabeo, Xarel·lo, Parellada, and a small percentage of Monastrell. Farming practices are certified organic and biodynamic.
