WINE MAKING PROCESS
The winemaking process for this Champagne begins with the soft pressing of Pinot Noir grapes. Fermentation occurs in two vessels: 90% in stainless steel tanks to retain freshness, and 10% in oak barrels for added complexity. Malolactic fermentation is carried out in stainless steel. Following fermentation, the wine undergoes an extended aging period of 30 months on its lees. The grapes are hand-harvested, and the estate adheres to certified 'High Environmental Value' and 'Sustainable Viticulture in Champagne' practices, including the abandonment of herbicides and insecticides.
