WINE MAKING PROCESS
The winemaking process for Dedicato a Walter begins with destemming and soft pressing, followed by fermentation in stainless steel tanks at controlled temperatures of 28-30°C for 12 days. Malolactic fermentation then takes place in barriques at 22°C in November. The wine is subsequently aged for 18 months in 225-liter French oak barriques, with a combination of 50% new and 50% second-fill barrels. This process is designed to capture the essence of the Cabernet Franc grape and the Bolgheri terroir.
