WINE MAKING PROCESS
The winemaking process for the Deidesheimer Leinhöhle Riesling Erste Lage begins with gentle pressing of the hand-harvested grapes. After a 24-hour sedimentation period, the must undergoes fermentation. A significant portion (70%) is fermented in stainless steel tanks, while the remaining 30% is fermented in traditional wooden barrels. The wine then matures on its fine lees until its bottling in April, a process that enhances its complexity and structure.
