WINE MAKING PROCESS
The winemaking process for Delampa Monastrell begins with hand-harvested Monastrell grapes. These are then subjected to a 15-day period of fermentation and maceration. This particular wine is intentionally not aged in oak barrels, a technique chosen to emphasize the grape's natural fruitiness and the characteristics of the Jumilla terroir. The vineyards are dry-farmed and situated on stony, limestone-poor soils at high altitudes.
